Three Warm Weather Salads & #PlankaDayinMay Challenge

I’m a big salad eater, and in warm weather I appreciate a good salad even more.  Since I do have salads so often, I like to create different flavor combinations to keep my taste buds happy!  Below are three summer-friendly salads that can make a great entree or side for any hot day!

1. Mexican Fiesta Salad with Blackened Tilapia

Ingredients

  • Romaine or Spring mix
  • Tilapia filets
  • chili powder, cumin, paprika, garlic powder
  • 2 slicing tomatoes
  • Red onion
  • Avocado
  • Red Pepper
  • Black Beans, Black Eyed Peas, Corn (I used a frozen mexican mix)

Directions:

  1. Season tilapia fillets with paprika, chili powder, garlic powder, and cumin mix
  2. Cook on the grill or in a pan or bake in the oven
  3. Slice tomatoes into wedges, the avocado,red onion and red pepper into slices.
  4. If your corn and beans mixture is frozen, heat that up until they are no longer frozen but cold or room temperature.
  5. Lay down the bed of lettuce on a large serving plate.  Top lettuce with tilapia fillets, peppers, onions, beans and corn, and I placed my tomato slices around the edge of the plate for decoration.
  6. To dress the salad I used a creamy cilantro-lime dressing. Recipe can be found here.

Ingredients:

  • Baby Kale or Spring Mix
  • Any mix of berries
  • Edamame
  • Red Onion
  • Balsamic Vinegar
  • Cucumber

Directions:

  1. Lay out bed of lettuce and top with berries, onion, cucumber, and edamame.
  2. For the dressing, I blended sliced strawberries, balsamic vinegar and olive oil together

Image3.  Strawberry Poppyseed salad w/ Grilled Chicken

Ingredients

  • Spring Mix
  • Strawberries
  • Red Onion
  • Balsamic Vinegar
  • Olive Oil
  • Poppyseeds
  • Grilled Chicken Breast, cut into slices
  • Slivered Almonds
  • Feta Cheese

Directions:

  1. Top spring mix with sliced strawberries, red onion, feta cheese and slivered almonds.
  2. Toss with balsamic vinegar and olive oil.
  3. Top with grilled chicken slices and poppy seeds.
