Healthy Easter Recipes

In my family, we usually have all cold foods on Easter, and we eat somewhere between lunch and dinner.  Our usual menu includes turkey, ham, potato salad, hard boiled eggs, some kind of salad, a fruit salad, and Paska bread.  Desserts include pies and all kinds of homemade Easter candies made by one of my aunts – desserts are always her specialty! I could easily keep it healthy by sticking to turkey, salad, fruit, and eggs, but I want to spice it up a bit and give myself a few more options.  I’ve been browsing the web and brainstorming for awhile now to come up with some new healthy Easter recipes.

Here’s what I’ve come up with…some of them are my own recipes & some are from other blogs and websites.

Salad:

Turkey & Pear Salad

Three Bean Salad

Braised Fennel, Carrots & Pearl Onions

Lemon-Mint Snap Pea and Lima Beans

Lemon-Thyme Roasted Brussel Sprouts

Dijon Asparagus w/ Mushrooms (can also be roasted)
